Look behind every healthy vegetarian population, and I will show you an animal.
The Indian Hindus, the original vegetarians, run the entire diet on ghee, paneer, curd and milk. Dairy at every meal, the cow quietly sacred for a reason.
The Okinawans, sold to you as plant-based and long-lived, built that reputation on pork. Braised belly, lard in the pan, fish off the boat.
The Seventh-day Adventists, the vegetarians science can't stop studying, are lacto-ovo to the bone, propped up on eggs, milk and the odd fillet of fish.
The Cretans, poster people for the Mediterranean miracle, ate sheep cheese and thick yoghurt every day, with snails and wild fish besides.
The coastal Italians, praised for their virtuous pasta and veg, flavour the whole plate with anchovy, pecorino and cured pork. Animal from the base up.
Every one gets waved about as proof you can thrive without animals.
Every one is thriving on one, three times a day, with its name left off the brochure.
Pull the dairy, the eggs and the fish out of any of them, and the miracle diet has about a year left in it.
The animal was carrying the whole show from the wings.
The food pulled off American shelves this month for putting more than a thousand people in the doctor's chair was not the beef or the eggs. It was the salad.
In July 2026 the parasite Cyclospora tore through the country in a run of outbreaks traced to shredded iceberg lettuce, grown in central Mexico and packed for the supermarket bag and the fast-food taco. More than sixteen hundred confirmed cases across several states, dozens hospitalised, one state alone reporting thousands more suspected. Taylor Farms pulled its entire central-Mexican iceberg from the market.
Meanwhile the steak in the same shop, the thing that carries a health warning by pure reputation, sat there fine.
And this is not a freak of one bad month. It is the pattern.
The CDC ran the biggest study of its kind on where American food poisoning actually comes from. Plants, not meat, caused about half of it. Produce alone accounted for 46% of illnesses. All the meat and poultry combined came to 22%, less than half as much. And the single most dangerous food in the country, ahead of everything else, was leafy greens. Beef, the great villain, was under 7%.
So the salad puts people in hospital more than twice as often as the meat, and the leaf at the centre of the healthy plate tops the entire list.
You would never know it, because the salad wears the halo and the steak wears the warning. The halo is a marketing decision. The hospital admissions are data.
Read a month of outbreak notices and count which foods keep coming up. It is almost never the one they taught you to fear.
"I don't add bananas to my smoothies because they contain polyphenol oxidase, an enzyme that can break down polyphenols."
A banana. A threat. Because it might, in the blender, slightly dent the level of a plant compound you were only chasing because these same people spent a decade insisting plant compounds are the secret to eternal life. There's a turf war in your smoothie and you're losing.
This is the entire grift. They have to build these fragile little cathedrals of biochemistry, enzyme by enzyme, because it's the only way to make a leaf sound like a miracle. Chop the broccoli and wait forty minutes to "activate the sulforaphane." Steam it, don't boil it. Add this, but never with that. It's not eating, it's a chemistry exam, and if it doesn't work, well, you must have blended the banana wrong.
That's the tell. A food that actually worked wouldn't need a user manual and fourteen disclaimers.
Now aim all that frantic energy at beef.
Nothing happens. There's nothing to build. No enzyme window, no activation ritual, no "don't pair it with." You cook it, you eat it, and your body has known exactly what to do with it for two million years.
Beef doesn't need a health claim. It puts its record on the table. What built the brain. What you actually absorb from a steak versus what you wave goodbye to from kale. The complete protein, the iron, the B12, all of it in a form that needs no unlocking.
No cathedral. No banana police. Just food.
Do the sum.
India is the world's largest real-life trial of the diet you've been told is healthy.
Low red meat. Low saturated fat. Lots of grains. Plenty of vegetable oil. Hundreds of millions vegetarian.
A billion people. Decades in.
How's it going?
- 101 million diabetics, the most on Earth
- Another 136 million on the starting line
- Heart attacks arriving a decade early
- Among the highest coronary disease rates in the world
- Industrial leaders in the thin-sick physique
- Traditional ghee swapped for seed oils in the name of "progress"
- A third of children stunted despite mountains of grain
- Widespread protein deficiency in a nation told plants were enough
Even India's own diabetes survey pointed to the problem: too many cheap refined carbohydrates, too little protein.
This isn't a warning about the future.
It's what happens when the dietary advice becomes the national menu.
They call India the diabetes capital of the world.
Your doctor's poster still calls that diet "healthy."
A glass of raw goat milk is the drink half the world grew up on. What's in it:
- 9g of complete protein a cup (softer curd than cow's, gone quicker)
- A third of your daily calcium (in a form the gut grabs easily)
- Fat globules a fraction of cow's size (goes down without the heaviness)
- Twice the medium-chain fats (liver burns them for energy, not your waist)
- Live cultures from the animal (the probiotics yogurt charges extra to add back)
- Naturally A2 (none of the A1 casein people blame cow's milk for)
- Less lactose than cow's (why the cow-intolerant often drink it fine)
The dairy aisle sells you the opposite. Skimmed, so the fat and its vitamins are gone. Pasteurised, so the enzymes and cultures are cooked off. Homogenised, so it resembles nothing a goat made.
Or the raw glass. Whole, warm, exactly as it left the animal.
They spent decades telling you milk was the problem. It was never the milk. It was what the factory did to it.
Eis a questão.
What people think cholesterol does:
- Clogs arteries
What cholesterol actually does:
- Fills your brain (a quarter of your cholesterol sits there)
- Insulates your nerves (no cholesterol, no signal)
- Builds your sex hormones (testosterone and oestrogen, straight from it)
- Becomes vitamin D (sunlight turns it into the hormone in your skin)
- Makes the bile that digests your fat (and unlocks vitamins A, D, E, K)
- Runs your stress response (cortisol is built from it too)
- Repairs every cell you have (it stiffens the walls)
Your liver makes around 1,000mg a day on purpose, because you cannot run without it.
They named the most vital molecule you produce the villain, then sold you a pill to lower it.
The wellness influencer reads the room, cracks the knuckles, and begins.
"So first we're going to want to address gut dysbiosis with a rotating probiotic protocol, four strains, cycled fortnightly. Then we're layering in liposomal glutathione for the oxidative load, a methylated B-complex because you're almost certainly an MTHFR carrier, magnesium bisglycinate at night, not the citrate, never the citrate. Adaptogenic mushroom blend at 8am for cortisol modulation. Zone two cardio, fasted, ninety minutes. We'll want a continuous glucose monitor to track your metabolic flexibility, and I'm going to need you eating thirty different plants a week for microbiome diversity. Oh, and we're pulling bloods every six weeks to titrate the stack."
That's roughly £400 a month in powders, before the app subscription.
Then it's my turn.
"Eat beef and eggs until you're full. Do that for a month."
"That's it?"
"That's it."
"But what about my microbiome, my methylation, my cortisol, my oxidative load..."
"Take the rubbish out and most of that sorts itself. You don't need thirty plants and nine supplements. You need to stop eating the stuff that put you here, and eat the food your body actually recognises."
The whole industry is built on making the answer sound complicated, because nobody's getting rich telling you to eat a ribeye and go to bed.
Simple isn't the budget option. It's usually the one that works, which is exactly why it's so hard to sell.
