Cast iron:

- One material, poured in a foundry
- Its non-stick layer is fat, baked hard onto the metal

- Outlives the person who bought it

Non-stick:

- A skin of PTFE over thin aluminium
- Starts breaking down at around 260°C
- The fumes give people polymer fume fever
- The same fumes kill pet birds in the next room
- Made with PFOA until the industry phased it out
- PFOA was found in the blood of nearly every American tested
- Sold on the understanding you'll buy another in a few years
