“Homeless” is a propaganda word used to describe people on the street who are mentally ill or severely addicted to drugs. The word implies that this is someone who fell a little behind on their mortgage payment and they’re one job offer away from getting back on their feet, which is obviously false if you’ve ever tried talking to a “homeless” person in SF, LA, NY, Austin or anywhere else.

The honest reality is that we need to bring back asylums for extreme mental illness or drug addiction for those who are a serious danger to themselves or others.

Your uncured bacon is cured. Pick up a pack and find the line that says no nitrates or nitrites added except those naturally occurring in celery powder. The company isn't hiding it, USDA requires that wording.

Celery is naturally high in nitrate, but the cure comes from nitrite, so the nitrate has to be converted. A supplier takes celery juice, adds bacteria that turn nitrate into nitrite, and lets it ferment. Then they dry it into a powder and blend it to a set nitrite level. The bacon plant mixes that powder into the brine it pumps into the pork bellies, often with cherry powder. The vitamin C in the cherry powder speeds up the cure, the job sodium erythorbate does in regular bacon. The nitrite breaks down to nitric oxide, which binds to the pigment in the meat and turns it pink like any cured meat.

It has to say uncured because celery powder isn't on USDA's list of approved curing agents. In 2020 USDA told the Center for Science in the Public Interest it planned to approve it as one and stop the uncured claim on meat made with it. In 2024 an FSIS official said the proposed rule would be out by early 2025. If celery powder is on the ingredient list, the bacon was cured.

The cinnamon in your cabinet is almost certainly cassia, which is a different plant.

Real cinnamon, the kind sold as Ceylon or true cinnamon, comes from Cinnamomum verum and it's grown mostly in Sri Lanka. Nearly everything sold in America as cinnamon is cassia, one of 3 related species grown in Indonesia, China and Vietnam. FDA does not require the label to tell you which one is in the jar, so most of the time it just says cinnamon.

You can tell them apart by looking at a stick. Cassia is one thick hard curl of bark that you could hit someone with. Ceylon is thin and layered like a cigar and it crumbles when you press it.

They don't taste the same. Cassia is hot and aggressive and it's what American baked goods are built around. Ceylon is lighter and more floral. A small jar of it costs 3 to 4 times as much per ounce as regular cinnamon, but buy it in a bag and it's about the same price.

McCormick's regular cinnamon is harvested in Indonesia, which makes it cassia. Their gourmet jar is Saigon cinnamon from Vietnam, and that's cassia too.
