Britain is £3 Trillion in debt.

Their reasoning was sound. A nightshade defends itself with glycoalkaloids. Solanine in the potato, tomatine in the tomato, solasonine in the aubergine. The molecule finds the cholesterol in a cell membrane, binds it, and pulls the membrane open. That is how it kills a fungus, a beetle and a caterpillar, and the lining of your gut is made of the same membranes.
The same compounds block the enzyme that switches your nerve signals off, which is the job an organophosphate pesticide does.
South London, 1979. Second day of the autumn term, and 78 boys at one school went down after lunch. Chips, ketchup, salsa, paprika crisps, a tomato sauce, a pepper in the stir fry. The plant family Europe would not touch is now the only one on the plate at every meal, and the dose is daily and lifelong.
The joints that ache in the morning, the gut that never settles, the skin nobody can explain. The people who take the family off the plate for a month write to me astonished, and the reply from the dietitian is that it is a fad.
500 years ago your ancestors would not eat it. They had seen what the cousins did.
In 1950 chicken was 1% of all the meat eaten in Britain, and nobody felt short of anything.
The pan lived at the back of the stove. Potato peelings, the water off the greens, crusts gone hard, a few weeds off the plot, and a scoop of meal stirred through it. It went down the garden warm in the morning, and six hens came at the sound of the bucket before they had seen what was in it.
The hen was not a meat animal. She was an egg machine that ran on the things you were going to throw away, and a great many households kept a few at the bottom of the garden. Four or five eggs a week per bird, for years, plus a bucket of manure for the vegetables.
The state agreed. During the war you could register as a domestic poultry keeper, hand back the family's egg coupons and take a coupon for feed instead. A household with a few hens in the garden was looked at and judged not to need rationing.
The meat was an afterthought and mostly somebody else's problem. Table birds then were surplus cockerels off the egg farms and hens who had finished laying. The old girl went in the pot rather than the oven, too worked to roast, and she made the best stock anybody in that house would ever taste, because everything that makes stock is what a bird accumulates by living.
We had it right, and it took about 30 years to undo.
An egg is a whole animal in a shell, assembled by a hen out of scraps. Every amino acid you need, choline, B12, A, D and K2, and the fats a brain is built from, all sitting in the yolk. A hen on grass and insects and kitchen waste lays a yolk of a colour most people under 40 have never seen. Nothing on a shelf is that dense at that price and nothing ever has been.
Set the other route beside it. In 1953 Britain produced 5 million chickens a year. By 1996 it was 778 million. A 1957 bird weighed about 905 grams at 8 weeks. Put a modern commercial strain on the same scale at the same age and it comes in over 4,000, on half the feed per kilo, and most never reach 8 weeks because they are killed at about 35 days.
We took an animal that handed you something every morning of its life, redesigned it to grow breast muscle at a rate that would have been thought a fantasy in 1957, and sold the result as the healthy option.
And the garden flock went, which is the part nobody argues about because nobody notices it.
What left the garden was a household's ability to produce a complete food out of its own waste, without money, without a shop, and without asking anybody. Every one of those small independences has gone the same way in the same 50 years. The pig at the bottom of the garden. The allotment. The coal in the shed. The bones from the butcher, free, for the asking.
A population that can feed itself slightly is a population with slightly less need of anybody.
Three hens at the end of a lawn will still give you a dozen eggs a week for years, on food you currently pay somebody to take away in a bin.
If you cannot keep them, find the house in your village with a box by the gate and an honesty tin, and buy from them instead.

Why did men reap wheat bare-backed from June to September for four thousand years without a single dermatologist watching them?

Why are the people loudest about there being no link the same people whose careers depend on there not being one?

British children had the healthiest teeth in this country's history during the war, and the worst thing that ever happened to them was 5 February 1953.
That was the day sweets came off the ration. Children emptied the shops that afternoon, and the decay curve turned within the year.
Thirteen years it had lasted. Eight ounces of sugar a week from January 1940, twelve ounces of sweets a month from 1942, and children under two allotted none at all. Forty grams a day for an adult. By the middle of 1954 the same adult was on eighty.
Decay in British schoolchildren fell right through the bombing and climbed the moment the sweets came back. Every rationed country in northern Europe saw the same thing.
Nobody had changed how they brushed. Fluoride toothpaste was not in British bathrooms yet. Fewer dentists, worse equipment, bombed cities.
The only thing that moved was the dose.
The stock joke is that Britain was half-starved in those years. A rationed child was eating meat, liver, kidneys, eggs, cheese, milk with the cream on it, dripping, bread, potatoes and whatever came off the allotment, with the sweet stuff throttled to a level no health department has managed to legislate since.
Decay is bacteria feeding on sugar and making acid, and the damage follows how often that acid arrives rather than how hard you scrub afterwards. Eight ounces a week, cooked into food and eaten at a table, is a few acid events a day. Eighty grams across a fizzy drink at eleven, a bar at three and a yoghurt at eight is a mouth that never gets an hour off.
Then the story got told backwards. The sugar stayed and the country was sold the defences instead. Electric brushes, whitening strips, mouthwash, six-monthly appointments, and a national conversation about technique.
Teeth were the least of it. People conceived just before rationing ended came out decades later with 35 per cent less type 2 diabetes and 20 per cent less high blood pressure than those conceived just after, and got both years later.
The Ministry of Food ran an accidental controlled trial on a generation, and the deprived years were the healthy ones.
Anyone born here before about 1954 had their mouth and their metabolism built on offal, milk, eggs and almost no sugar, by a government that thought it was making them go without.
LDL is the most slandered molecule in medicine, and the defence of it has been almost as wrong as the attack.
Every cell you own has cholesterol built into its membrane, and LDL is how it gets there.
Testosterone is made from cholesterol. So is oestrogen, progesterone, cortisol and aldosterone. There is no second route.
Vitamin D is made from cholesterol sitting in your skin waiting for sunlight.
Bile is made from cholesterol, and without bile you absorb no fat, and no vitamin A, D, E or K.
LDL is the delivery vehicle for vitamin E, CoQ10 and the carotenoids, none of which swim through blood on their own.
It binds bacterial endotoxin and carries it out of circulation, which makes it part of your immune system. People who arrive in hospital with sepsis and low LDL do worse than people who arrive with high.
In people over sixty, higher LDL tracks with the same or lower all-cause mortality across the large majority of cohorts anybody has troubled to look at.
Your liver makes most of your cholesterol itself, because it will not leave a supply this important to whatever you decided to have for lunch. Nearly every nucleated cell in your body can build it from scratch. Nothing your body builds its own factories for is a poison.
So the particle is not the villain. But something is happening in those arteries, and calling LDL harmless and walking off is the same error wearing the other coat.
An LDL particle is a vehicle carrying cargo, and vehicles can be damaged.
It can be oxidised, and what oxidises is the polyunsaturated fat packed inside it, which is why the particle takes on the character of the oil you have been cooking in.
It can be glycated, sugar-coated, from a lifetime swimming through high blood glucose.
It can be kept in circulation far longer than it should be, and the longer it circulates the more of both of those things happen to it.
An intact particle goes into the artery wall, does its work, and comes back out. Nothing touches it.
A damaged one is taken up by a different receptor entirely, one with no off switch, so the macrophage keeps swallowing until it is too full of fat to move. That immobilised cell is what plaque is built from.
