- "I didn't rape her" claim isn't evidence

No claim is evidence. That is the point!

If saying that were enough then saying "no, I didn't rape her" would also work.

B can still lose the case, but it won't be because of the CNC claim.
As you yourself said, words don't count as evidence

If A practices CNC with B, and B for any reason decides to accuse A of rape afterwards, the CNC claim does not work as a defense.

CNC is consensual sex where participants are pretending it's not. Rape is not pretended.
