The Sous Bois is a wine that has always appealed to me partly due to the Pinot noir/Meunier profile and also to the oak ageing the wine undergoes (sous bois translating to under wood).I just love the balance and harmony, & this is the wine that sparked a love for Billecart-Salmon
The 2002 Nicolas Francois sees extended lees ageing, and is only released when perfectly ready- in this case, 2013. This wine moves through being brioche and green fruit through to honeysuckle, pear drops & croissant. Delicious and very moreish! Follow me on Instagram for more.
