@Bill_Linnane “Regional styles” are production choices which would have its roots in practical applications. its roots are agricultural in nature. Traditional Spirits are a result of what’s resources are in the area and what grows well due to the soil and climate.
Many pubs are struggling with cost inflation, punitive taxes and Government pay policy. After we pay everyone else there’s little left.

@OConnellWhiskey Bourbon whiskey cannot have caramel color added as a coloring agent. - But there is no need due to the rule that Bourbon must use a Virgin cask which gives it an Amber colour. But then again Bourbon has no minimum age unless it is Straight Bourbon.
