GENIUS HEALTHY LAVA CAKE DESSERT
This is without a doubt the best high protein dessert Ive made with cottage cheese.
It packs 43g protein and 400 calories for the entire batch, which you can easily divide into 2 or 3 servings. It’s also rich and chocolatey, and you can add as many chocolate chips as you desire to make taste even better!
Here is how I made it:
Ingredients:
8oz cottage cheese (half a 16oz tub)
2 eggs
4 tbsp powdered monkfruit (or sweetener of choice)
3 tbsp cacao powder (use 2.5 tbsp if you want it less rich)
Small splash of vanilla extract
Optional but highly recommended: a sprinkle of sugar free or chocolate chips
1️⃣ First, the cottage cheese. I processed 8oz cottage cheese in a small food processor until smooth to get rid of the curds. Transfer to a small oven-safe bowl.
2️⃣ To the processed cottage cheese, crack in 2 eggs
3️⃣ Add the cacao powder (I use 3 tbsp … sometimes more… but I like it really rich)
4️⃣ Stir in 3 to 4 tbsp of powdered monkfruit or preferred sweetener. Make sure it’s POWDERED. That is key
5️⃣ Add a splash of vanilla extract and mix thoroughly till you have a nice smooth batter.
6️⃣ Sprinkle chocolate chips on top, if desired, shake it so it somewhat submerges into the cake to get you the lava cake feel. Again, use as many as you like.
7️⃣ Pop it into the oven and bake at 350°F for 33-35 mins.
8️⃣ Remove, let cool for two or three mins.
This is such an easy lowcarb dessert, it’s also protein packed and perfect for a healthy dessert meal prep!

Full Recipe:
1 lb cooked shredded chicken (rotisserie works great)
½ red onion, finely diced and soaked in water for 10 minutes, then drained
Handful of fresh cilantro, chopped
1 avocado, cubed
Dressing:
5 tbsp cottage cheese
3 tbsp mayo
1 tbsp onion powder
Juice of 3 limes
Handful of cilantro
Salt & pepper to taste
Blend the dressing ingredients, toss everything together, then roll it up in thinly sliced cucumber.

Chicken Gyros with Creamy Tzatziki Wraps
Ingredients (serves 4–6)
Chicken and Marinade
2 lb boneless, skinless chicken thighs (or breasts, pounded to even thickness)
3 tbsp olive oil
3 tbsp lemon juice
3 cloves garlic, minced
2 tsp dried oregano
1½ tsp ground cumin
1½ tsp smoked paprika
1 tsp ground coriander
1 tsp kosher salt
½ tsp black pepper
Optional: ¼ tsp cayenne for heat
Tzatziki Sauce
1½ cups plain Greek yogurt (whole milk for best texture)
1 cup cucumber, grated and well-squeezed dry
1–2 cloves garlic, very finely minced
1½ tbsp lemon juice
1 tbsp extra-virgin olive oil
1–2 tsp fresh dill, finely chopped (or ½ tsp dried)
¼–½ tsp kosher salt, to taste
Black pepper to taste
Quick Greek-Style Flatbreads (or use 6–8 store-bought pitas/naan)
2 cups all-purpose flour (260 g)
2 tsp baking powder
1 tsp kosher salt
1 cup plain Greek yogurt (250 g)
1 tbsp olive oil (plus more for cooking)
For Assembly
2 cups shredded romaine or iceberg
1 cup diced tomatoes
½ cup thin-sliced red onion
½ cup crumbled feta
2 tbsp chopped parsley (optional)

Steps
Marinate the chicken
In a bowl, whisk olive oil, lemon juice, garlic, oregano, cumin, smoked paprika, coriander, salt, pepper, and cayenne if using.
Add chicken, coat well, and marinate at least 30 minutes (ideally 2–12 hours, refrigerated). Bring to room temp 20 minutes before cooking.
Make the tzatziki
Grate cucumber, then squeeze out excess water in a towel until fairly dry.
Stir together yogurt, cucumber, garlic, lemon juice, olive oil, dill, salt, and pepper. Adjust lemon/salt. Chill to meld flavors.
Cook the chicken
Grill: Preheat grill to medium-high. Oil grates. Grill thighs 5–7 minutes per side (breasts 4–6 per side) until nicely charred and internal temp hits 165°F/74°C.
Stovetop: Heat a large cast-iron skillet over medium-high with a light film of oil. Cook in batches 5–7 minutes per side to deeply brown.
Rest 5 minutes, then slice into thick strips. Toss with any pan juices.
Flatbreads (skip if using store-bought)
Mix flour, baking powder, and salt. Stir in yogurt and 1 tbsp oil until a soft dough forms. Knead 1–2 minutes just to smooth.
Divide into 6–8 balls. Rest 10 minutes.
On a lightly floured surface, roll each to 6–7 inches.
Cook on a hot dry skillet 1–2 minutes per side until puffed and spotted; brush lightly with olive oil or melted butter and keep wrapped in a towel to stay soft.
Assemble the gyros
Warm flatbreads. Add a bed of shredded lettuce, then the sliced chicken.
Spoon over tzatziki. Top with tomatoes, red onion, feta, and parsley.
Finish with a squeeze of lemon.
Tips for that charred, juicy look
Use thighs for extra juiciness and better charring tolerance.
Pat chicken dry before searing; don’t overcrowd the pan.
Rest the meat before slicing to keep it moist.
For extra flavor, sprinkle a pinch of oregano and feta over the wraps right before serving.
