Confused between merging your Pawtato lands @PawtatoFinance into an estate or province? I can't say pick one over the other. But I can share how I analyze both scenarios. Noted below are key differences with an example. Used @freaccss pawdash portal to build a single province and two estates.

Example combination:
Sky/Soil : Sundown/violet
Size of resources : All large except crystal which is small

Province yield per day without tools : $10.76

Out of 9 from province, I had to change 3 in the second estate for best yield.

Estate 1 yield per day without tools : 6.72
Estate2 yield per day without tools : $6.45
Total : $13.17

You can see the yield difference between a province and estate. Almost a 22% increase in this case.

Difference in benefits between ESTATE and PROVINCE lands

1. Ascension: Estate quests raise Heroes up to Epic; Province up to Legendary

2. Production/storage: Estate = 2x production, 4x storage; Province = 3x production, 9x storage.

3. Buildings: Estate gets 1–3 Medium and 2–4 Small; Province gets 1–3 Large, 3–5 Medium, 3–5 Small (rolls at merge).

Conclusion:

If yield is your strategy, two estates wins over one province. If doing quests up to legendary, having large buildings and raising heroes up to legendary is important, then province is the way.
