@Masterbuilt When I first fired up my 800, I did ribs and then a brisket. @madscientistbbq has an awesome video on bone in, skin on chicken thighs. I did that too. Those chicken thighs are the best and are so good for easy BBQ night.
Pretty proud of this brisket. It took forever with the wind keeping the ambient low. Rested in a vevor warming oven for 8 hours after an 18 hour cook on my @Masterbuilt Gravity 800. Was glorious. Salt, pepper, lump and split. Let's gooo!

Cooked in my @Masterbuilt Gravity series 800. 12 hours at 250. Splits and lump. Wrapped at 165, pulled at 200, 15 hours resting in my warming oven at 170 degrees. Salt, pepper and love. Best brisket I have ever made. This smoker is the best!
