Here's a simple gluten free option when the family is eating spaghetti 🍝
1. Broil a portabello mushroom with olive oil, salt, pepper.
2. Boil frozen spinach with salt, pepper, and garlic powder.
3. Top the cooked mushroom with the cooked spinach and spaghetti sauce.
I got out for a fun little hike around monument rock this weekend. I was by myself, but met two nice ladies that I walked and chatted with. What a fun surprise! It was a gorgeous morning.

Sweet potatoes contain Vitamin A and Vitamin C for you immune health and fiber for your gut health. They are a great starchy vegetable to eat instead of regular potatoes.
I like to bake them with coconut oil, cinnamon, salt, and pepper. My family gobbles them up!

One of my favorite ways to use leftover roasted chicken is making chicken salad lettuce wraps!
It's so easy: mix diced chicken, 1 apple diced, roughly chopped pecans, thyme, salt and pepper, and some olive oil mayo. You can also use grapes instead of apples if you have them!
