Lentils are an underrated pulse packed with B vitamins, iron, and a satiating duo of fiber and complete protein. Plus, they’re so quick to cook—no soaking required. Make them in advance for this cool salad🥗 recipe (or buy a canned variety). It’s even more memorable when dressed with lemony🍋 vinaigrette, cucumber🥒 , mint, and pomegranate.
1½ teaspoons lemon juice
2½ teaspoons extra-virgin olive oil
⅛ teaspoon sea salt, or to taste
½ cup (90 grams) chilled cooked brown lentils or canned lentils, drained
¼ cup (38 grams) finely diced English cucumbers
1½ tablespoons chopped fresh mint leaves plus
a few small mint leaves, divided
2 teaspoons pomegranate arils (seeds)
In a medium mixing bowl, whisk together lemon juice, olive oil and 🧂salt. Add lentils, cucumbers and chopped mint and stir🥣 to combine.
Transfer to a small serving bowl, sprinkle with pomegranate arils and small mint leaves and serve.
Makes 1 serving (about ⅔ cup/140 grams each).

Eggplant 🍆(also known as aubergine) offers fiber, anthocyanins (which makes its peel purple!), and health-protective phytonutrients, like nasunim. Keeping the peel on provides the most nutrition. And blending up the sautéed eggplant cubes, tahini, lemon juice, zest, cumin, and sea salt provides a velvety dip with Mediterranean flair.
