Carbon and radioactive dating are based on decay. Entropy is in the nature of all of creation since the fall of Adam and Eve. That decay is consistent, we can measure the rate at which it decays which allows us to see how much it has decayed allowing an approximation of age. Carbon dating is better for shorter term biological life and radioactive decay is better for longer term assessment of the age of the earth.
