The lie I taught in medical school: vinegar is just a salad dressing, and a splash of acetic acid cannot blunt the glucose spike from a carb meal. A controlled breakfast study found that vinegar with white bread lowers the early blood-glucose and insulin rise in a dose-dependent way.
