The French Used To View The Potato As Satanic

In 1748, French Parliament passed a law making it illegal to grow potatoes. Not because of a food shortage. Not because of a trade dispute. Because they genuinely believed the potato caused leprosy and invited demons into the soul.

And they had reasons, strange as they sound now. The potato grew underground, which in the deeply Catholic France of the 18th century carried a particular kind of suspicion. It was not mentioned in the Bible, and it looked strange. It was lumpy and misshapen and came from the New World, which the church had not entirely made peace with yet. The medical establishment had no real understanding of how diseases spread, and the potato's knobbly skin bore a resemblance to the lesions of the afflicted that was close enough for frightened people to draw conclusions. So France banned it. Not for pigs. Not for cattle. For human beings. Grow a potato for a person to eat, and you were breaking French law.

The ban held for 24 years.

The man who broke it was a pharmacist named Antoine-Augustin Parmentier, and the way he did it is one of the most creative marketing campaigns in the history of food.

Parmentier had been captured by the Prussians during the Seven Years War and spent three years in prison eating almost nothing but potatoes. He emerged healthy. He emerged well-fed. He emerged convinced that France had made a catastrophic mistake. When he returned to Paris he began a decade-long campaign to overturn the ban, and he found that logic and science alone were not going to be enough. The French public was not interested in being told they were wrong.

So he changed tactics.

In 1781, King Louis XVI granted Parmentier a large plot of land at Sablons, on the outskirts of Paris. Parmentier planted it entirely with potatoes. Then he stationed heavily armed soldiers around the perimeter and made absolutely sure everyone in the city knew they were there. Anything guarded that fiercely, the thinking went, had to be extraordinarily valuable.

The guards had secret instructions. If anyone tried to steal potatoes during the day, stop them. At night, let them go. And if anyone offered a bribe for access to the field, take it, no matter how small.

Within weeks, Parisians were sneaking into the field after dark and digging up potatoes to plant in their own gardens. The vegetable that France had declared a disease-causing menace was now being stolen because people assumed it must be precious. Parmentier had tricked an entire city into wanting the thing they had spent a generation refusing to touch.

He also hosted lavish dinner parties where potato dishes were served to most prominent guests in France. One of the people who sat at his table was Benjamin Franklin. He presented potato flowers to King Louis XVI and Marie Antoinette in the gardens of Versailles. The queen wore them in her hair. The king placed one in his buttonhole. Overnight, potato flowers became fashionable at the French court.

The king, moved by whole campaign, reportedly told Parmentier: "France will thank you one day for you have found bread for the poor."

The timing turned out to matter enormously. France in late 1780s was facing catastrophic grain shortages that would soon help ignite a revolution. The potato, which could grow in poor soil, produced three times the calories per acre of wheat, and survive conditions that killed grain crops, became a literal lifeline. The same tuber parliament had outlawed forty years earlier was now feeding people who would otherwise have starved.

Parmentier died in 1813. He was buried at Pere-Lachaise Cemetery in Paris. Visitors still leave potatoes on his grave.
