@RestrictedDaily Professional chef opinion. This is actually super solid, it works great on a lot of proteins. Almost any seafood you want to grill it’s amazing on. At the end of the day it’s just an egg emulsion and it makes everything amazing. When I was at Gramercy Tavern we did it on tilefish
