Mac Cheese Bacon Burger Rolls
Ingredients:
- 1 lb ground beef
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 2 cups cooked macaroni pasta
- 2 cups shredded cheddar cheese
- 1 cup cooked crispy bacon, crumbled
- 1 tbsp ketchup
- 1 tbsp yellow mustard
- 8 large flour tortillas
- 2 tbsp butter, melted
Instructions:
1. Cook the Seasoned Beef: Heat a skillet over medium heat and add the ground beef. Season with salt, pepper, garlic powder, and onion powder. Cook, breaking it up with a spoon, until it's nicely browned and cooked through. Drain any excess grease and set aside.
2. Make the Mac and Cheese Mixture: In a large bowl, combine your cooked macaroni, shredded cheddar cheese, crumbled bacon, ketchup, and mustard. Add the cooked seasoned beef and mix everything together until well combined. This filling is going to be absolutely loaded with flavor!
3. Assemble the Rolls: Lay out your tortillas on a clean surface. Spoon a generous portion of the mac and cheese beef mixture onto the center of each tortilla. Roll them up tightly like burritos, tucking in the sides as you go to keep all that delicious filling inside.
4. Toast Until Golden: Brush each roll all over with melted butter - this is what gives them that beautiful golden crust. Heat a skillet over medium heat and cook the rolls seam-side down first, then rotate them every 2-3 minutes until all sides are golden brown and crispy.
5. Slice and Serve: Let the rolls cool for just a minute, then slice them in half to show off that amazing filling. Serve them warm with your favorite dipping sauce - ranch, sriracha mayo, or even more ketchup and mustard work great!
Garlic Butter Chicken Rigatoni
Ingredients:
- 12 oz rigatoni pasta
- 1½ lb boneless, skinless chicken breasts, cut into bite-sized chunks
- 2 tbsp olive oil
- 4 tbsp unsalted butter, divided
- Salt and cracked black pepper to taste
- 1 tsp Italian seasoning
- ½ tsp garlic powder
- 4 garlic cloves, finely minced
- ¾ cup chicken broth
- 1½ cups heavy cream
- 1 cup shredded sharp cheddar cheese
- ½ cup freshly grated Parmesan cheese
Instructions:
1. Cook the Pasta: Bring a large pot of well-salted water to a boil. Add the rigatoni and cook until just al dente, following the package directions. Drain and set aside.
2. Sear the Chicken: Heat the olive oil and 2 tablespoons of butter in a wide skillet over medium-high heat. Add your chicken pieces and season generously with salt, pepper, Italian seasoning, and garlic powder. Let the chicken sear without moving it too much until it gets golden brown edges and stays juicy inside. Transfer the cooked chicken to a plate.
3. Cook the Garlic: Turn the heat down to medium and add the remaining 2 tablespoons of butter to the same skillet. Toss in the minced garlic and cook for just 30 seconds or so until it smells amazing. Don't let it burn.
4. Build the Sauce Base: Pour in the chicken broth and use your spoon to scrape up all those tasty browned bits stuck to the bottom of the pan. Add the heavy cream and let it warm up and start to thicken slightly.
5. Add the Cheese: Turn the heat down low and stir in the shredded cheddar and grated Parmesan. Keep stirring slowly until both cheeses melt completely and the sauce becomes thick, smooth, and glossy.
6. Toss the Pasta: Add your cooked rigatoni to the sauce and toss everything together until every piece of pasta is coated inside and out with that creamy goodness.
7. Add Chicken Back: Gently fold the garlic butter chicken back into the pasta, mixing carefully so the chicken pieces stay tender and don't break apart.
8. Rest and Serve: Take the skillet off the heat and let the pasta rest for a minute. This gives the sauce time to settle and cling to everything perfectly. Serve hot.
Mini Meatball Cupcakes
Ingredients:
- 24 small frozen meatballs (1 oz size)
- 1 (8 oz) tube Pillsbury crescent dough sheet
- 1 cup pizza sauce
- 1 cup shredded mozzarella cheese
- Grated Parmesan cheese (optional)
Instructions:
1. Preheat Oven: Preheat your oven to 375 degrees Fahrenheit.
2. Partially Cook Meatballs: Cook the frozen meatballs according to the package instructions, but only cook them for half the recommended time. Since they'll be cooking again once they're baked in the dough, you don't want them fully cooked yet.
3. Prepare the Dough: While the meatballs are cooking, open the tube of Pillsbury crescent dough sheet and place it onto a large cutting board.
4. Cut the Dough: Using a pizza cutter, cut the dough into 24 equal squares. This should be a fairly simple task since the dough already comes perforated - just follow those lines and cut to create equal portions.
5. Prepare the Muffin Tin: Grease a 24-count mini muffin tin with cooking spray to prevent sticking.
6. Place Dough in Cups: Place one cut dough square into each cup of the mini muffin tin, pressing gently so it sits at the bottom.
7. Add Sauce Base: Using a small spoon, evenly distribute about 1 teaspoon of pizza sauce onto the bottom of each dough square.
8. Add Meatball: Place one partially cooked meatball on top of the sauce in each cup. Gently push the meatball down so the sauce spreads around it.
9. Add More Sauce: Top each meatball with approximately 1 more teaspoon of pizza sauce.
10. Add Cheese: Evenly top each sauce-covered meatball with shredded mozzarella cheese. You can also add a little grated Parmesan cheese if desired for extra flavor.
11. Bake: Bake for 10 to 14 minutes until the dough is thoroughly cooked and lightly golden. The exact time may vary depending on your oven.
12. Cool Slightly: Allow the meatball cupcakes to cool for a few minutes before carefully removing them from the pan using a small fork or knife to help lift them out.
13. Serve: Serve warm with extra pizza sauce on the side for dipping. These are best enjoyed fresh from the oven!
Chicken Bacon Ranch Roll-Ups
Ingredients
8 small flour tortillas (6–7 inch)
2 cups cooked chicken, chopped or shredded (rotisserie works great)
6 slices bacon, cooked crisp and crumbled
1½ cups shredded cheese (cheddar, Monterey Jack, or a blend)
4 oz (115 g) cream cheese, softened
1/3 cup ranch dressing (plus more for dipping)
2 tbsp chopped fresh parsley or chives
1 tsp garlic powder
1/2 tsp onion powder
1/4 tsp black pepper
1–2 tbsp hot sauce (optional)
2 tbsp butter, melted (or neutral oil) for the skillet
Optional add-ins
1/4 cup finely diced green onion
1/2 cup finely diced bell pepper (sautéed)
Pinch of smoked paprika
Instructions
Make the filling
In a bowl, mix cream cheese, ranch dressing, garlic powder, onion powder, pepper, and hot sauce (if using) until smooth.
Fold in chicken, bacon, shredded cheese, and parsley/chives until evenly combined.
Assemble
Warm tortillas briefly (microwave 10–15 seconds or in a dry skillet) to make pliable.
Spread about 1/3 cup filling in a line across the lower third of each tortilla. Roll tightly, tucking edges slightly as you go. Place seam-side down.
Cook Skillet method (crispiest):
Heat a large nonstick skillet or griddle over medium heat and brush with melted butter.
Add roll-ups seam-side down and cook 2–3 minutes per side, turning to brown all around until golden and the cheese is melted, 6–8 minutes total.
Air fryer:
Brush roll-ups lightly with melted butter or spray with oil.
Air-fry at 380°F (193°C) for 6–8 minutes, turning once, until crisp and melty.
Oven:
Place on a parchment-lined sheet, brush tops with butter, and bake at 425°F (220°C) for 10–12 minutes, flipping halfway.
Serve
Sprinkle with extra bacon bits and herbs if you like. Serve hot with ranch (or chipotle ranch) for dipping.
Tips and swaps
Chicken: Leftover grilled chicken or poached chicken works; season lightly with salt/pepper if plain.
Cheese: Cheddar for sharpness; add mozzarella or Monterey Jack for extra stretch; a little pepper jack adds heat.
Make-ahead: Assemble up to 24 hours ahead; cover and refrigerate. Cook just before serving.
Freezer-friendly: Freeze assembled roll-ups on a sheet tray, then bag. Cook from frozen in the oven at 400°F (205°C) for 18–22 minutes, or air-fry 10–12 minutes, until hot and crisp.
Add veggies: Stir in sautéed mushrooms, spinach, or caramelized onions to balance richness.
Serving ideas
Pair with a simple side salad, tortilla chips and salsa, or roasted veggies.
For a party platter, slice each roll-up into 3–4 bite-size pieces and secure with toothpicks.

Now, I have to say, he might be on to something about home made fettuccini alfredo.
I know how to make my own sauce, but I've never done it by pan or used his final "secret" ingredient.
I'll be trying this soon.
Sweet potato treat 😋
Full Recipe:
1 medium cooked sweet potato (about 1 cup)
½ cup milk
1-2 tbsp raw honey
2 tbsp unsweetened cocoa powder
Optional: ½ tsp vanilla extract
Optional: pinch of salt
Preparation Steps
Cook the Sweet Potato: Roast, steam, or boil your sweet potato until it is completely soft all the way through (easily pierced with a fork).
Cool Completely: Allow the cooked sweet potato to cool down entirely. You can even pop it in the fridge.
Tip: Using a warm sweet potato will melt the ice cream texture and make it runny.
Measure: Scoop out 1 cup of the soft, cooled sweet potato flesh (discard the skin).
Blending & Freezing InstructionsLoad the Blender:
Add the cooled sweet potato, ½ cup milk, 1–2 tbsp raw honey, 2 tbsp unsweetened cocoa powder, and your optional vanilla extract or pinch of salt into a blender.
Blend Until Smooth:
Process on high speed until the mixture is completely uniform, glossy, and creamy with absolutely no remaining potato chunks.
Freeze to Set:
Pour the smooth mixture into a glass jar or a freezer-safe container. Cover it tightly and place it in the freezer for 1.5 to 2 hours.
Scoop and Serve: Remove from the freezer once it hits a thick, scoopable soft-serve consistency.
Note: If you leave it in the freezer overnight, it will freeze solid. If that happens, simply let it sit out on the counter for 10–15 minutes to thaw slightly before scooping.
