Here’s how to make authentic tonkotsu broth.
Ingredients (serves 4–5)
∙Pork leg bones (genkotsu) — 2 kg
∙Pig’s trotters — 1–2
∙Pork back fat — 200 g
∙Green parts of leek — 2 stalks
∙Ginger — 1 knob
∙Garlic — 1 whole bulb
∙Water — 4–5 L
Steps
1.Prep the bones. Soak the bones and trotters in cold water for 1–2 hours to draw out blood. Then parboil them in plenty of water for 10 minutes, drain, and scrub off any clinging blood and scum under running water. Skipping this step leaves a gamey smell in the final broth.
2.Start the boil — high heat. Put the bones in a large pot with the water and crank it to high. Once it boils, keep it at a hard rolling boil the entire time. This is the single most important rule of tonkotsu. Skim off the scum aggressively for the first 30 minutes.
3.Long simmer. Boil hard for 8–12 hours. Top up with water as needed so the bones stay submerged. Around the 6-hour mark, add the leek, ginger, and garlic. Drop in the back fat at the same time so it melts into the broth.
4.Crush the bones. Once the bones have softened in the later stages, smash them with a ladle or rolling pin to release the marrow. This is what drives the broth to that deep cloudy white and gives it body.
5.Finish. Keep the heat high so the collagen and fat fully emulsify. When the broth turns milky white and thickens, it’s done. Strain before using.
Key points
∙Low heat gives you a clear broth (chintan), not tonkotsu. The hard boil is non-negotiable for that white, opaque color.
∙On a home stove, 8 hours is realistic. A pressure cooker gets you close in 2–3 hours.
∙The seasoning tare (shoyu or shio) is made separately. Hakata-style: pour the tare into the bowl first, then ladle the broth on top.
