AS a chef that does ordering from different suppliers, including Sysco, you don't know the headache involved here. When you are feeding a few hundred people a day as even a small restaurant, that is an insane amount of food. I could get local beef, for about 2 days. /
@Johnny_Rebb2 The argument isn't that sysco are all pre-prepped, you imbecile. It's that Sysco products are sourced by terrible means. Confined quarters for animals, glyphosate soaked produce, soy-fed cows and chickens, etc.
@A_Wyatt_Man But again, I can't get local. Every local farm is overwhelmed with what I ask for. I get local produce when it is in season, I have a good mushroom guy that gets me my oyster, lion's mane and trumpet mushrooms and I know a guy that gets morel's in season./
@A_Wyatt_Man I'm saying that unless you source all your food yourself, your never going to get what your asking for. It's not financially viable. All beef is finished with grain. All chickens are fed grain. Every farmer uses Round up to control weeds. We built this system and I hate it.
This is the harsh reality of the food you are eating. Look up those Vital Farm chicken eggs and see how they get away with the "pasture raised" crap. If food was raised the way you want. it would cost 3 times as much, maybe more. As a chef, the best I can do is control what I can
But your naive if you think everything you are getting is "grass fed" or "pasture raised". Best you hope for is that that "Organic" isn't just name only. Farmers have finished beef with grain for years. Chickens need feed for protein to make eggs. /
@LucyPyre_ As a chef that has made macaroons, this is true. I have made them stuffed with ice-cream which made them marginal better but normal ice-cream cookies are still superior. Cheesecake filled donuts though... I'll try those next.
