@TheScoop27 Nice! I’m on the home stretch with some beef ribs right now. One rack with Spicelopedia Texas Hatch Chili run and the other (right) with @AngryIrishman14 Red Aye rub. Only wrapped for an hour and now finishing. Currently around 180°.
