How to Dial-In Coffee Beans for Beginners.
Does your home coffee taste overwhelmingly sour one day and intensely bitter the next? It all comes down to understanding your grind size.
Are you a barista that's in the habit of tapping your cofee basket after you've tamped it? Well as Luke explains it's a practice that you should seriously reconsider.
Tapping your basket will 'crack' and dislodge your puck. The force creates micro-fractures and cracks in the compressed coffee puck. It can also cause the puck to loosen from the sides of the basket wall.
When high-pressure hot water hits the coffee puck, it will always take the path of least resistance. Water rushes through these newly formed cracks (known as channeling), resulting in an uneven extraction and an underextracted shot.

We compare ultra-fresh beans (1 day old), perfectly aged specialty beans (18 days old), and stale pantry beans (5 months old).
