@Kaetrin67 Mmmm Certain they were large eggs and not extra large? (B/c I’ve done that before! 😂) From what i remember, didn’t have any issue with curdling after the addition of the egg whites I’m afraid. But yes, as long as batter looked smooth at the end, that’s 👌

@Kaetrin67 But having said that, the chances of curdling overall is high too b/c you’re mixing in all the “wet” together 1st. You could change the method & instead add half of the dry, followe by the sour cream, ending with the last half of dry. I think that would work also for this recipe

@Kaetrin67 Never experienced curdling to be honest. It likely happened b/c not all the ingredients were at room temp. But from my experience, it won’t affect the baked cake at all. Have you added the dry ingredients in yet? Once added, that should create a nice smooth batter.

@Kaetrin67 I’ll try it with the light version next time I use the recipe & will you know! 😊 I did read somewhere that a light sour cream would make the baked good less heavy. Perhaps there is a difference, who knows! But glad you liked it!

@Kaetrin67 Mmm good q! With that recipe, we’ve only used full fat. But broadly speaking, I have heard that it’s ok to switch to a light version for baking if that helps!
