Citrus Feta Salad with Orange Segments, Pistachios & Mint
Ingredients
1 cup baby spinach or arugula
2 large oranges, peeled and segmented
½ cup feta cheese, crumbled
¼ cup pistachios, roughly chopped
2 tbsp fresh mint leaves, chopped
Honey Citrus Dressing
1 tbsp extra-virgin olive oil
1 tsp fresh lemon juice
1 tsp honey
½ tsp Dijon mustard
Salt, to taste
Freshly cracked black pepper, to taste
Instructions
1. Prepare the Ingredients
Wash and dry the baby spinach or arugula.
Peel the oranges and carefully cut them into segments, removing any seeds.
Roughly chop the pistachios.
Crumble the feta cheese.
Finely chop the fresh mint leaves.
2. Make the Dressing
In a small bowl, whisk together the olive oil, lemon juice, honey, and Dijon mustard until well combined.
Season with salt and freshly cracked black pepper to taste.
3. Assemble the Salad
Arrange the spinach or arugula on a serving platter or in a large salad bowl.
Scatter the orange segments evenly over the greens.
Sprinkle with the crumbled feta, chopped pistachios, and fresh mint.
4. Dress and Serve
Drizzle the honey citrus dressing over the salad just before serving.
Toss gently to coat all the ingredients without breaking up the orange segments.
