Nishtha Chauhan saw a future filled with banana leaf plates, millet dosas, and zero food waste, where none existed before.
Nishtha left behind a promising career in aerospace to return to the earth, quite literally.
Instead of climbing the corporate ladder, she chose to till soil, grind millets, and compost kitchen scraps.
Her journey wasn’t a spontaneous detour.
Raised in a modest Gujarati household, she grew up watching her grandfather advocate for ancient grains like ragi, jowar, bajra, and little millet.

“At the time, I didn’t think much of it,” she recalls. “But as an adult, I realised how deeply those habits were ingrained in me and how important they really are.”
At 27, Nishtha founded Café Aarambh in Gujarat. It is a zero-waste, millet-based café that earns ₹12 lakh/month, serves meals on banana leaves, and generates almost no plastic trash.
But that’s not all.
She now trains schoolchildren to eat mindfully, replacing junk food with local grains and purpose.
