@simonpw1974 @AscotRacecourse @JamesTCoombs @BECTbuild In my humble view (using my physics and chemistry days) it all has to do with the spreadability, texture, stickiness and firmness of each. Based on the fact that jam is stiffer, firmer and heavier this should go at the bottom with the lighter more malleable cream on top.
