You actually don't know what you're talking about. 500 fps is used for slow mo, being that you're compressing 500 frames per second into a 24 or 30 fps video. Your phone screen is 60-120fps, this video was probably shot in 24-30 fps but it's being interpolated, they squeeze more frames in between to make it look more fluid. Soap operas used to do this.
