Lemony Whipped Feta with Charred Spring Onions Recipe .
Ingredients:
200g feta cheese
75g cream cheese (full fat works best)
1 lemon (zest and juice)
2 tablespoons extra virgin olive oil (plus extra for drizzling)
1β2 tablespoons water (to adjust consistency)
Freshly ground black pepper to taste
4β5 spring onions (trimmed)
Pinch of Chilli flakes (optional)
Warm flatbread or crusty bread to serve
Method:
Char the spring onions:
Heat a griddle pan or non-stick frying pan over high heat until smoking hot.
Lightly brush the spring onions with a bit of olive oil and place them in the pan.
Cook for 2β3 minutes on each side until nicely charred and softened. Remove and set aside.
Make the whipped feta:
In a food processor add the feta cream cheese lemon zest lemon juice and olive oil.
Blend until smooth and creamy. If the mixture is too thick add a tablespoon or two of water until you reach a whipped consistency.
Season with freshly ground black pepper to taste.
Assemble:
Spoon the whipped feta onto a serving plate or shallow bowl and swirl it with the back of a spoon.
Top with the charred spring onions a drizzle of olive oil and a pinch of chilli flakes (if using).
Serve:
Enjoy immediately with warm flatbread or crusty bread for dipping.
