All Don Pablo and Subtle Earth Organic coffees are roasted under the supervision of our Roastmaster, Julian.
Julian has over 20 years of coffee roasting experience and is the son of a coffee grower from Sevilla, Colombia.
Before your coffee reaches our roasters, it's carefully inspected and graded by our Q Grader and green coffee importing expert, Emil Segebre. Quality starts long before roasting. It's one of the many ways we help ensure every cup meets our specialty coffee standards.
Not all coffee is processed the same way.
After harvest, the fruit is removed from the coffee cherry and the beans are washed, and dried in the sun.
This is known as the washed process. It's prized for producing coffees with clean flavors, balanced body, and a smooth finish.
Did you know coffee cherries don't all ripen at the same time?
That's why quality coffee is carefully picked by hand. Farmers return to the same coffee trees multiple times, selecting only the perfectly ripe red cherries at their peak.
