Filtering wine removes yeast particles and small bacteria from wine after fermentation and before bottling. Unfiltered wine is left to rest in its tank, allowing the yeast to float to the bottom gently. The clear wine is siphoned off from the cloudy sediment at the bottom.
Our Pinot Noir paradise. This image is of Domaine Lois Louise, our steep-slope vineyard. It resides at 1,700-feet, directly facing the Pacific Ocean. As you see in the picture, the vineyard sits above the fog line, basking in refrigerated sunshine.
Did you know there is a specific glass for drinking Pinot Noir? The bowl is broad with the Pinot Noir glass to allow for aromas to collect. The lip of the glass is shorter, letting the wine arrive at the tip of the tongue so that you can taste more of its subtle flavors.

• Have a napkin handy to wipe the spout
• Hold the bottle towards its bottom (not by the neck)
• Rotate the bottle away from you as you stop
• Stop pouring quickly and deliberately to avoid drips
