The Aavatara which is missing from the list of Dashavatara is Bhagvan Gautama Buddha.

Hayagreev avatara is an avatara separate from Dashavatara (minor incarnation). Hence you did not see these murtis as part of the 8 avataras.

The list of dashavataras is given in Srimad Bhagvatam. However unfortunately leftist historians have given a new twist to this story in recent times. They created a narrative that Buddhavatara was appropriated by (the so called) "Brahmins" because it was posing a competition to Hinduism. And Neo Ambedkaris have taken this narrative to a whole new level. I am not a historian, but I have read enough material from multiple sources which proves that Buddha was always part of the dashavataras. He is mentioned in Bhagvatam which predates his appearance.

This gets in more confusing further because now certain Shankaracharya has also mentioned that these were two diferent buddhas (there are multiple buddhas in Indian history which have happened) hence the confusion. Anyways, for your question, Bhagwan Buddha is the answer.
