Not all carbon filters remove the same things. Standard activated carbon handles chlorine, taste, and odor. Chloramine and that rotten-egg sulfur smell need catalytic carbon, processed to speed up the reactions regular carbon struggles with. Same look, very different job.

The EPA limit is 10 mg/L. Above it, the water can be a real risk for infants under six months. On a well, once a year is the standard nitrate check.
Boiling water kills bacteria, viruses, and parasites. It does not remove lead, arsenic, or other dissolved chemicals. Heat kills living things but leaves dissolved metals behind. So if your concern is lead or arsenic in a well, boiling is not the fix.
A water softener doesn't remove hardness. It trades it: calcium and magnesium out, a little sodium in, by ion exchange.
The harder the water, the more sodium added. Watching sodium? Potassium chloride pellets, or keep one unsoftened cold tap for drinking.
Rotten egg smell from your water? Before you blame the well, smell the cold tap and the hot tap on their own.
If only the hot water smells, the water itself is likely fine. It is the heater: the anode rod turns sulfates into hydrogen sulfide gas.
That chlorine smell at the tap is not a mistake. Cities keep a little chlorine in the water on purpose so it stays disinfected all the way to your house. By the time it reaches your glass it has done its job, which is why a simple carbon filter can take the taste back out.
Deionized water is some of the purest water you can make. It is also the wrong water to drink.
Strip out every mineral ion and you get lab water: flat, slightly aggressive, made for a bench, not a glass.

EPA caps arsenic in public drinking water at 10 parts per billion, and utilities test for it by law. Private wells sit outside that rule, so the testing is on the owner. Arsenic seeps into groundwater from rock. Reverse osmosis and adsorptive media are what bring it down.
Most home water filters are not built to remove fluoride. A basic carbon pitcher is not designed for it. For fluoride, the EPA points to activated alumina and reverse osmosis. If lowering it is your goal, match the method to the goal, not the label on the box.
