@MemphisBBQ_Ohio I've just run a few on a pellet grill but hot and fast wasn't bad fast rendered in most of it, it did have some parts that weren't great. It was also a small brisket that the local butcher had. That was the reason I tried it like I did.
First brisket I've done on a drum hot and fast. It wasn't too bad imo room for improvement of course but I'd serve it and I actually did. It went over real well.
