Locally grown Oca
Oca is a potato-type crop very distinct lemony flavour. We serve it with a creamy Walnut sauce, salty house smoked Pancetta and rehydrated Walnuts for bit of texture finish with Rozemary Oil.

For 6 loafs we used 4kg of Potatoes
Proofing for 3 days in the Fridge to slow down the Fermentation and gain more flavour..

Chicken, Fermented Barley, Onion Squash, J. Artichoke
We ferment the Barley for 7days to achieve the right savoury flavour. The Squash is pickled with a few spices and muscovado sugar and then grilled (better texture and adds sweetness)
Last is the Creamy-Nutty J. Artichoke Puree
All this Vegetables are in season right now. They're all Organically grown from our fantastic local producer @anghrianglasfarm
