That’s because it’s Sonic’s proportions that change between iterations, not just his height.
He’s still around 3 feet regardless, and same with the rest of the cast, their proportions adjust as well

Simpler way I would describe Sonic’s muzzle (or any other adjacent cartoon character) though is it essentially being his cheek
Sonic’s face isn’t really that alien to an actual human face
