I think the new starters are intentionally designed to have little detail on them. Looking back at previous generations starters they have all their details fully shown from their basic forms.

details later on in their evolutions. Think of it like a blank canvas, each time they evolve they get an additional “splash of color” on them that is a part of its core being. We’ve never seen such basic singular color Pokémon before so maybe they’re switching it up?
