Roasted Carrots with Whipped Ricotta and Hot Honey
Ingredients
For the Carrots
1 bunch carrots, peeled with tops trimmed
2 tablespoons olive oil
1 tablespoon honey
Salt and black pepper, to taste
1/2 teaspoon chili flakes (optional)
For the Whipped Ricotta
1 cup ricotta cheese
2 tablespoons cream cheese or Greek yogurt
1 tablespoon olive oil
Pinch of salt
For the Hot Honey
3 tablespoons honey
1/2 teaspoon chili flakes
1 teaspoon lemon zest
Garnish
Fresh parsley or basil, chopped
Extra lemon zest
Cracked black pepper
Instructions
Preheat oven to 425°F (220°C).
Toss carrots with olive oil, honey, salt, pepper, and chili flakes.
Spread on a baking sheet and roast for 25–30 minutes, turning halfway, until caramelized and tender.
Meanwhile, blend ricotta, cream cheese, olive oil, and salt until smooth and creamy.
In a small saucepan, gently warm honey with chili flakes and lemon zest for 1–2 minutes.
Spread whipped ricotta onto a serving plate.
Arrange roasted carrots on top.
Drizzle generously with hot honey.
Finish with herbs, lemon zest, and cracked pepper before serving.
Chicken with Spinach and Mushrooms in Creamy Parmesan Sauce
Ingredients:
4 boneless, skinless chicken breasts
2 tablespoons olive oil
Salt and pepper to taste
8 oz mushrooms, sliced
3 cups fresh spinach
4 cloves garlic, minced
1 cup heavy cream
1 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes (optional)
Fresh parsley, chopped (for garnish)
Directions:
Season the chicken breasts with salt and pepper.
In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the sliced mushrooms and cook for 5 minutes, or until they release their juices and start to brown.
Add the minced garlic and cook for about 1 minute, or until fragrant.
Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
Pour in the heavy cream and stir in the grated Parmesan cheese and Italian seasoning. Cook for 3-5 minutes, or until the sauce thickens slightly.
Return the chicken breasts to the skillet, nestling them into the sauce. Cook for an additional 5 minutes to allow the flavors to meld.
Garnish with fresh parsley and red pepper flakes, if desired. Serve hot.

1 ½ lb boneless, skinless chicken breasts
Kosher salt and black pepper
1 tsp oregano
1 tsp paprika
1 tsp coriander
2 tbsp extra virgin olive oil
12 oz fresh mushrooms (any type), sliced
½ cup chicken broth
1 tbsp ghee or unsalted butter
3 green onions, chopped
2 garlic cloves, minced
Parsley for garnish (optional)
Instructions :
Preheat the oven to 200°F.
Slice the chicken breasts horizontally to create thinner cutlets. Season with salt, pepper, oregano, paprika, and coriander.
Heat 2 tbsp of olive oil in a large skillet over medium-high heat. Sear the chicken for 3-4 minutes on one side, flip, and cook for another 3 minutes until golden brown.
Transfer the chicken to an oven-safe dish and keep warm in the preheated oven.
In the same skillet, add butter and sauté the mushrooms for about 5 minutes until they soften. Add chicken broth, garlic, and green onions. Season with salt and pepper.
Bring the sauce to a boil, then lower the heat. Scrape up the browned bits from the bottom of the pan for added flavor.
Nestle the chicken into the sauce, spoon some over the top, and serve immediately.
