Our winerfighter uses his large fire hose for pumping over. 🚒 We empty fermenting must from the bottom of the tank and then pump it to the top of the tank. This increases the extraction of colors and tannins from the skins. 🍇🍷 This is #hotstuff ! 🔥 #donnasummer
Like the miners digging out the gold from deep underground during the gold rush, we are crawling into the vat and separating the fermented must from the pomace (skin & pips) before being transferred into another vat. Then the pomace is pressed to extract the remaining juice 🍇🍷
During the process of fermentation that turns grape juice into an alcoholic beverage, carbon dioxide in the air makes it quite unbreathable. We are currently adding dissolved oxygen that will be devoured by the yeast. We reassure you, our wine is just doing fine ! 🤣🤩
