My husband, @albert_riopel just loves pasta! So, I made another Tortellini Pasta dish tonight.
Main Menu:
*Tortellini Beef Pasta on Alfredo Sauce
Dessert:
*Cheesecake with Fruits on Top (store-bought)
Main Menu Ingredients:
- Tortellini Pasta
- Beef Hamburger Meat
- Alfredo Sauce
- Herbs πΏ & Spices (garlic, onions, pepper, salt & oregano)
- Soya Sauce & Oyster Sauce (optional)
- Mushroom soup
- Cream or milk
Cooking Instructions:
For Pasta,
- Put the Tortellini Pasta in a boiling water until its 75% fully-cooked, and before adding to the Pasta Sauce. Drain water and put it aside.
For Beef Hamburger Pasta on Alfredo Sauce,
- Fry the beef hamburger meat until 75% fully-cooked.
- Add herbs & spices (fresh or powdered)
- Add the Tortellini Pasta, and mix it with the beef hamburger pasta sauce.
- Then, add the mushroom soup and stir.
- Right after, add the Alfredo sauce and stir.
- Once its fully-cooked, add the right amount of soya sauce & oyster sauce.
- If you notice that the pasta dish is a bit salty or thick, add a cup of milk.
-If it's the other way around, maybe a bit bland, add small drops of soya sauce or sprinkle salt and pepper to taste.
Finally, serves the Tortellini Beef Pasta on Alfredo Sauce with garlic bread, and bowl of salad π₯.

My husband (@albert_riopel) & I (@EarlaRiopel) started investing almost 15 yrs ago.
We tried earlier, but having three children who were underaged then, a single-income household was toughed on a family of five.
In addition, my mom became a widow in March 2012. When my dad died, he was a Canadian π¨π¦. So, we ended up taking care of my mom, especially now that she has a few medical issues, including Alzheimer disease. Also, she cannot walk far because of her diabetes and arthritis diseases.
Anyway, year 2012 was a new beginning for all of us. Lots of great opportunities. My husband had accumulated around $200,000 of RRSP Contribution Limit.
Since, I needed cash to buy spousal RRSPs, the only capital I had was an 'unused BMO credit card' with $10,000 limit, and had an 8% interest rate.
Since then, my husband and I have been using someone else money to make money π°, and bought assets that appreciate, like real estates and marketable securities.
So far, we bought five (5) real estates properties since 2015. We sold our first one in mid-April 2024, after 8.5yrs of ownership. We still have four (4) real estates properties right now.
We don't have much marketable securities left, maybe just $65,000 combined between me and my husband, as of today. We mostly used up our Individual and Spousal RRSPs for those 5 real estate properties.
Going back to Canadian π¨π¦ school in my 50s wasn't so bad (on-and-off US CPA exam candidate as well). I must have received around $160,000 with zero (0%) interest, between 2018-2025; it helps a lot. By the way, about $25,000 of student aids were considered grants (free money π°). Thus, it pays 75% of my tuition fees and other related school fees. So, it just really my time as my opportunity cost.
Anyway, the take away on this long writing βοΈ is, if you think you can take a few calculated risks. In addition, you have access to fundings, so when opportunities 'knock at your door πͺ, you're ready to capitalize on those opportunities.
Use your cash first to invest. If you don't have any, use your good credit standing. You can use low interest credit cards (at 8%), credit lines (at 7%) or RRSP loans (at 4.5%) and buy RRSPs to save taxes (as tax refunds) on individual income, buy a home π‘ as a first-time homebuyer(s).
"Leveraging can be a investment strategy, just make sure you can manage the risks."

Like for example, this weekend we were at our cabin in Point Roberts, WA πΊπΈ (right at Roosevelt Way, Border of USA πΊπΈ & Canada π¨π¦). We usually, just buy β½οΈ gas, but this time we stopped by at our favourite supermarket (Point Roberts πΊπ²International Market) bought a few ingredients for a Sunday BBQ dinner.
But we're so tired of doing yardwork, so we decided to postponed the BBQ for next week.
It's mostly gardening for me (@EarlaRiopel) and finishing the roof shingles for my husband, @albert_riopel, this last weekend at Point Roberts.
We're back now at our New Westminster place. Tonight, I cooked a very simple dinner.
This is what I cooked:
(1) Stir-fry Pork & Mixed Veggies
(2) Steamed Basmati Rice
Instructions:
- Crushed a few cloves of fresh garlic.
- Slice a fresh onion.
- Fry the pork with garlic & onion.
- Add few dashes of herbs πΏ & spices, such as salt, pepper and parsley.
- Add a few drops of soya sauce.
- Once the pork is at least 65% fully-cooked, add all the cut-up veggies in the pan.
-Mix all the ingredients and taste it once it's 100% fully-cooked.
- Add extra salt or pepper, or soya sauce, only if needed.
- Finally, serve it with steamed rice.
Fun Fact:
- Some of the veggies came from our gardens in Point Roberts πΊπΈ, Lantzville π¨π¦ & New Westminster π¨π¦ (herbs only).
- Zucchinis (from my eldest daughter).
- Broccoli π₯¦ & Carrots π₯ ( store-bough).
I have been buying a few $SPCX.TO lately. It's a good strategy to shorten the gap from the IPO price & current market price.
So far, even after selling $SPCX.TO of over $6,000 (used for emergency expenses related to newly bought vacant land development), I still have investment of around $14,700 in $SPCX.TO.
It's still down around 15%-17%. Thus, when it gets closer to under 5%, I usually takes it out; hedges the funds and diversified my portfolio. I find it a good portfolio risk management π.
It's a win-win situation or at least minimized losses. At the end, everybody wins through diversification & hedging, a portfolio risk management strategy better than gambling your π°money, with no investing & trading system in place. ^ ER βοΈ (@earlariopel)

For a small garden in Point Roberts, USA πΊπΈ, we have a few veggiesπ«π«π₯π₯π«πΆπ₯¬π₯ to munch.
As for our Lantzville, BC π¨π¦ property, it's our first planting. They are mostly in pots and other containers this year. It was too hot this summer, most of my peas π« dried up even before flowering.
However, recently, we have a newly installed waterπ§well, and is fully usable. Thus, we have 'endless of water' (sort of) at our Lantzville π¨π¦ property! So, π«snowpeas planting continues all-year round.
Finally, as for our Skagit Valley πΊπΈ land property and New Westminster condo property, not much planting this year, due to time and location; probably next summer.

Well, my husband, @albert_riopel has been requesting a Pasta dish!
So, here it is! It's quite an easy fast meal to cook.
"Tortellini on Pasta Tomato Sauce with Beef Hamburger"
Cooking Instructions:
*Put Tortellini Pasta on a boiling water until 80% full-cooked.
*As for the Pasta Tomato Sauce with Beef Hamburger,
- Fry the hamburger
- Add some herbs πΏ & spices such as oregano, parsley, black pepper, garlic and onion (fresh or powdered)
- Add dice of fresh tomatoes π & fresh peppers πΆ π« & leaves π (use some harvested from our Lantzville, BC π¨π¦ property).
- Add a jar of Prego Sauce
- Add a tin of mushrooms (fresh mushrooms is fine).
- Add cubes of cheddar cheese π§
* Mix the boiled Tortellini Pasta to the Pasta Tomato Sauce with Beef Hamburger. Simmer for at least 15 minutes.
*Make sure to taste it, if needs extra salt π§ or pepper or both.
*Finally, serve the Tortellini Pasta Dish with Baked Pizza π Bread or garlic π§ π Bread. Enjoy!
By the way, my husband, Albert loves it! He said, "It tasted good, just the right mixed of ingredients for Tortellini Beef Pasta! βΊοΈ
