A doctor in Japan ate lightly seared chicken, had a week of diarrhea, and is now in a wheelchair. The reason is that Campylobacter, the bacteria in most raw chicken, wears a sugar coat copied almost molecule for molecule from the surface of human motor nerves.
About two thirds of Campylobacter jejuni strains carry the copy. The sugar on their outer membrane matches GM1, a ganglioside concentrated where your nerves meet your muscles. Your immune system cannot tell the forgery from the original.
So it builds antibodies against the bacterial coat, clears the infection, and keeps hunting the same signature. It finds it on your own nerve fibers. One to two weeks after the diarrhea ends, the antibodies start stripping the wiring. Weakness begins in the feet and climbs. In severe cases it reaches the diaphragm and the patient goes on a ventilator. This is Guillain-Barré syndrome, and Campylobacter is its most common trigger worldwide.
The odds per infection are about 1 in 1,000. That sounds reassuring until you see the denominator. Japan officially records around 2,000 to 3,000 Campylobacter poisonings a year. When researchers ran active surveillance in 2006, the real number came out near 1.5 million. The official count was low by a factor of 450, because a few days of diarrhea rarely gets reported to anyone.
Toriwasa makes the math worse by design. The dish is seared on the outside and raw at the center, and Campylobacter dies at 65°C at the center of the meat. It keeps the one layer that matters below the one temperature that matters.
The man in the wheelchair spent his career warning patients about preventable risks. Japan is now writing its first nationwide hygiene rules for raw chicken dishes. The antibodies that took his legs were manufactured by his own body, doing exactly what it was built to do.
