In Middle Chinese there are words for various dairy products. These were used to translate Sanskrit terms. The noun su 蘇 translates Sanskrit ghṛta (ghee), but in practice it was a kind of salted cheese. Lao 酪translates dadhi, which was basically yogurt. Ru 乳 translateskṣira, which is milk or more likely buttermilk. Tihu 醍醐 (probably a Xiongnu loanword in Old Chinese) referred to pure butter fat.
Dairy products are described in materia medica from the period, indicating that they were treated as medicine rather than staple foods, although certainly people enjoyed dairy at times.
One issue is that the region around the capital Chang'an 長安 is a low-selenium (Se) area. Horses and cattle could not thrive on the local soil. This would presumably meant that dairy products were luxuries. There was a large number of Iranians and Indians in the capital, so we can imagine local production of dairy by them, but it would have been resource intensive. Alternatively, the products could have been brought in from other regions.
