Canopy lets new chains inherit security first, then gradually become more independent instead of forcing every project to solve validator bootstrapping on day one.
NestBFT was another interesting piece. Mixing Proof of Stake with Proof of Age gives smaller chains extra protection against long-range rewrite attacks while they're still growing.
I also didn't expect to see a recovery design for chains that temporarily stop producing blocks.
