Chicken Tacos

Serves: 4 • Makes: 8–10 tacos • Prep: 15 minutes • Marinate: 20 minutes • Cook: 10 minutes • Total: about 45 minutes

Ingredients
For the chicken
1 1/2 lb boneless, skinless chicken thighs or breasts, cut into small pieces
2 tbsp olive oil
2 tbsp lime juice
1 tsp chili powder
1 tsp smoked paprika
1 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp oregano
1 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne, optional
For serving
8–10 small corn tortillas
1 avocado or 1 cup guacamole
1 cup diced tomatoes
1/4 cup finely sliced red onion
1/2 cup crumbled queso fresco or feta
1/4 cup chopped cilantro
Lime wedges
Optional quick topping mix
1 cup diced tomatoes
2 tbsp chopped cilantro
1 tbsp finely chopped red onion
1 tsp lime juice
Pinch of salt

Instructions
1. Marinate the chicken
In a bowl, mix olive oil, lime juice, chili powder, smoked paprika, cumin, garlic powder, onion powder, oregano, salt, black pepper, and cayenne if using.
Add the chicken and toss well to coat. Let it marinate for 20 minutes, or up to 2 hours in the fridge.
2. Make the topping
If using the quick topping mix, stir together the tomatoes, cilantro, red onion, lime juice, and a pinch of salt. Set aside.
3. Cook the chicken
Heat a large skillet or grill pan over medium-high heat.
Add the chicken and cook for 7–10 minutes, stirring occasionally, until browned with a little char and fully cooked through.
4. Warm the tortillas
Warm the tortillas in a dry skillet for about 20–30 seconds per side, or directly over a flame for a lightly charred edge.
5. Assemble
Fill each tortilla with the chicken. Top with avocado or guacamole, diced tomatoes, red onion, queso fresco, and cilantro.
Serve with lime wedges on the side.

Tips
Chicken thighs stay juicier and give the best taco texture.
Let the chicken get a little char for that street-taco look and flavor.
If you want more heat, add hot sauce or sliced jalapenos on top.
For extra flavor, drizzle with a little chipotle crema or sour cream mixed with lime juice.

Easy variations
Add shredded lettuce for crunch.
Swap chicken for shrimp or steak.
Use flour tortillas if you prefer softer tacos.
