@BrockRiddickIFB There are many clinical dairy proteins affected by pasteurisation, but the process is needed to remove pathogens. LF can be harvested from skim milk prior to any milk/cheese production to avoid heat treatment & then added back into infant formula or similar products.
@opnfm@krassenstein Maybe, but that likely means the Aus portion is being sold at or below cost. NZ butter is much cheaper than Aus butter due to milk price. It's strategic to combine Aus & NZ for labeling purposes so consumers can feel they are supporting local, when really, the majority is NZ.

@Gould17Daryl@krassenstein Worked in Aus Dairy for 10 years & now a global dairy trader. Butter has been on an unusual high for 3 years & inflation is cooked, so cheaper alts have been sourced. But now, the global butter market is crashing yet Aus hasn’t responded. Look at GDT & CME. It’s 40% < Aus prices.
@krassenstein The 3 major reasons why Aus milk is so expensive are energy prices, labour costs & too many dairy factories. There is also a law that prevents milk prices from declining mid year to align with global market changes. It’s hard not to seek cheaper options considering living costs.
@krassenstein Aus milk is a very expensive input & butter is uncompetitive globally. Most dairy producers direct their fat stream to cream (on sold for ice cream), or they combine skim milk powder with surplus cream to increase standardised milk for cheese products. Butter is a last resort.
