First Crawfish Boil of the Year. Invite the neighborhood and pack the coolers with cold ones.
- Wash a large batch of live crawfish.
- Build the flavor base in a huge boiling pot: lemons, limes, oranges, onions, jalapeños, potatoes, garlic, sausage, "Southern Boy Season" blend, and liquid crab boil/spices.
- Dump in sacks of crawfish (start with 4 lbs, add more); boil ~10 minutes until they float.
- Add extras like sausage, green beans, corn on the cob, and shrimp to balance and infuse flavors.
- Let it simmer 20–30 minutes so the crawfish sink and soak up the spicy, seasoned broth (they "pop" out of shells when ready).
