@BillyGomila If your in the mood for more of a savory and simple, we roast them like you would an Irish Potato. Dice them into 1” thick cubes, with skin on. Coat with olive oil, season with whatever herbs and seasoning you like, throw in some onion and pepper slices, bake until tender.
