Apple Cheesecake Bars 🍎🍰✨
Creamy cheesecake layered with cinnamon apples and a buttery graham cracker crust - these bars taste like apple pie and cheesecake in one dreamy dessert!
Ingredients
For the Crust
2 cups graham cracker crumbs
1/2 cup melted butter
2 tablespoons sugar
For the Cheesecake Filling
16 oz cream cheese, softened
1/2 cup sugar
2 eggs
1 teaspoon vanilla extract
For the Apple Topping
2 apples, peeled and diced
2 tablespoons butter
1/4 cup brown sugar
1 teaspoon cinnamon
1 tablespoon cornstarch
2 tablespoons water
Instructions
Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
Mix graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of the pan.
Bake crust for 8 minutes, then let cool slightly.
In a large bowl, beat cream cheese and sugar until smooth. Add eggs and vanilla, mixing until creamy.
Pour cheesecake filling over the crust and smooth the top.
In a skillet over medium heat, melt butter and cook apples with brown sugar and cinnamon for 4–5 minutes.
Mix cornstarch with water and stir into apples. Cook until thickened and glossy.
Spoon apple topping over cheesecake layer.
Bake for 35–40 minutes until the center is set.
Cool completely, then refrigerate for at least 3 hours before slicing into bars.

Cod in Lemon Butter Tomato Sauce
Ingredients
2–4 cod fillets
Salt & black pepper
2 tbsp olive oil
2 tbsp butter
3 cloves garlic, minced
1 cup cherry tomatoes (halved)
½ cup chicken or vegetable broth
Juice of 1 lemon
Zest of ½ lemon
1 tsp red pepper flakes (optional)
1 tbsp fresh parsley, chopped
1 tsp dried oregano or Italian herbs
Instructions
1. Season the fish
Pat cod dry and season both sides with salt and pepper
2. Sear the cod
Heat olive oil in a pan over medium heat
Sear cod for 3–4 minutes per side until lightly golden
Remove and set aside (it will finish cooking later)
3. Build the sauce
In the same pan, melt butter
Add garlic and sauté for about 30 seconds
Add cherry tomatoes and cook until they soften and release juices (3–5 minutes)
4. Add liquid & flavor
Pour in broth and let simmer for 2–3 minutes
Stir in lemon juice, zest, red pepper flakes, and herbs
5. Finish cooking
Return cod to the pan
Spoon sauce over the fish and simmer for another 3–5 minutes until cooked through
6. Serve
Garnish with fresh parsley
Spoon extra lemon butter sauce over top

Don’t overcook cod—it should be flaky and tender
Add a splash of white wine for extra depth
Serve with rice, pasta, or crusty bread to soak up that sauce
