Burgers and potatoes are RICH in umami. Ketchup has that too from the tomatoes, but the sour from the vinegar, sweet from the sugar, and salty from the salt complete the picture making it a condiment that has enough taste elements to balance a burger (or fries) itself! 😅

In addition, ketchup is a fascinating ingredient and it makes sense why it’s so widely used with burgers and fries and somewhat contentious with hot dogs.
