@CoachKBarbee Did you wrap the whole time? The first part of how I do gets that dark red ring around it, no matter what type of seasoning because the smoke smoke is allowed to penetrate due to not being covered. Then I cover to keep moist for rest of cook.
@CoachKBarbee Im no master but when I smoke my brisket I smoke the meat unwrapped at 220° until about meat temp 170° take off and wrap (either foil or butcher paper) turn up heat to about 300° until meat temp reaches 190° keep wrapped with foil and towels and rest in cooler for at least 30 min
