3) Today in our dysphagia kitchen experience students created a range of delicious recipes and audited them against the IDDSI guidelines. It was a great success!

1) The International Dysphagia Diet Standardisation Initiative (IDDSI) is a global standard to describe texture modified foods and thickened drinks for individuals with swallowing difficulties of all ages, in all care settings
2) The IDDSI framework consists of a continuum of 8 levels (0-7), where drinks are measured from Levels 0 – 4, while foods are measured from Levels 3 – 7.
1) Beyond the Blender is the dysphagia cookbook created by Simone Howells in collaboration with the Griffith University Master of Speech Pathology students!

2) There are a variety of tasty recipes included, both sweet and savoury and have been divided into 3 categories, based on their texture, for easy navigation!

4) Additionally, we can see that thickened fluids can be enjoyable if we are creative with our approach, such as with the thickened Tiramisu Mocha. Whilst this might be funny for us, it is many people’s everyday reality.

1) One of the ways speech pathologists manage Dysphagia (swallowing difficulties) is by modifying patients diet to a texture that they can safely swallow. This management often involves thickening their drinks, even water!
3) In this short clip, one of our second year students Rachel films her Dad trialing two texture modified drinks. This gives us insight into the reactions and experience of people with dysphagia who may be restricted to consuming texture modified diets every day.

5) Simone has also led the development of the Griffith university dysphagia friendly recipe book “Beyond the Blender”. Not only did Simone launch this recipe book with great success, but our second years are now coming up with recipe ideas for a second edition of the book!
