In this case, no matter what speed you move the mouse, the one which has 2 DPI will initiate a single x/y value at half the distance of 1 DPI at the same starting position.

The idea that 1600 dpi (or more) has a lower sensor response time is a misunderstood metric. Assuming a mouse has a consistent polling rate (e.g. 1000 times per second), then the higher DPI will initiate a change faster because of the distance moved is quicker to initiate a count

I used much more nuanced measurements personally, but by using a mental thought experiment, if you have 1 count per inch versus 2 counts per inch, then you will quickly realize that any movement of the mouse will initiate the first count faster by having more "per inch."
